Holiday Bite-Sized Treats: How to Utilize Christmas Remains into NYE Appetizers
What types of canapes can I prepare for New Year’s Eve using my Christmas leftovers that will still seem festive?
Finger food needn't be fancy, so New Year's offers a great opportunity to clear the decks. The key rule is to keep things to just one bite—no one wants to handle a fork. People just want a comforting taste of hearty fare with a decadent twist.
If you have a bit of smoked salmon left, layer it on mini pancakes and top it with lumpfish caviar. Small patties are also just the ticket: If you have leftover smoked haddock or hot smoked salmon, mix it through mashed potato, blend with dill, lemon, and fried leeks, then roll in Japanese breadcrumbs and deep-fry.
You could also get creative with croquetas. Prepare the white sauce a few days ahead, then use remaining pork, poultry, or foraged fungi for the filling. Whizz old bread into breadcrumbs to cover them, then cook until crisp. Savoury pastry fillings are another natural home for those breadcrumbs, or use them as a coating for bite-sized chicken. Seasoning-wise, just add a bit of citrus zest and aromatic herbs, and they'll taste so much more. As an aside, croissants make excellent crumbs, too.
One beloved treat at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Get some ham and turkey in an sealed tub and freeze. While you're at it, set aside some berry relish and sweet glaze in the refrigerator. When needed, thaw the meat, then pop it in a hot oven with the reserved glaze for a short time. Let it cool and slice thinly, then lay on top of some artisan bread and assemble mini sandwiches with lots of tangy sauce. Cut into small squares for a winner.
Leftover turkey, meanwhile, could be transformed into a zingy salad. There’s always a bit of dark meat left over, and it's perfect for something full of flavour. Pull the meat, then fry it slowly in a pan, and toss with leftover cranberry sauce thinned with citrus juice, a spoonful of soy sauce and a little spicy oil. Garnish with chopped herbs and some green onions, and present in little gem leaves.
Revamping Leftover Vegetables
Veg, meanwhile, can be scrubbed up and ready to party with a big batch of bubble and squeak. Mix all your remaining vegetables with fresh herbs, then season and add flour. Cut out portions to about the size of blinis, then keep in the freezer. Refresh in a preheated oven for a few minutes and top with your choice of topping—perhaps roast beef and sharp horseradish. A good tip, though: set some aside for a late breakfast the next day.
